Cutting a warm, fresh piece of moist banana bread and slathering it in butter is one of my favorite things to do.
I have fond memories of pulling out the banana bread recipe with my grandma and sitting around the table, chatting away the afternoon and playing Chinese Checkers. It also makes for a great date night!
If you’re like me, then you frequently find your fruits and veggies starting to go bad before you have a chance to eat them.
BUT you don’t have to throw away your bananas! When the bananas start turning dark colors I whip out this recipe and my mixer and start baking (or freeze them until you’ve got an unstoppable banana bread craving).
This recipe is hard to mess up and the best part of this easy banana bread recipe is that all the ingredients are very healthy for you.
The worst part about this recipe is mashing up the bananas. I HATE that… but sacrifices must be made for the sake of deliciousness. In fact, I hate smashing up bananas so much that I have found that I will get big chunks of banana in my bread. That is kinda gross actually when you’re expecting a bread consistency. I’ve started putting my bananas in the blender to make sure I don’t get those chunks. But don’t do that with all your batter cause it will make your bread a little flat.
Another beautiful thing about a good banana bread recipe is that you can add all sorts of goodies into your batter. You can hide veggies such as zucchini or carrots, nuts of course, or turn it into even more dessertish and add healthy chocolate chips.
Make sure you make enough banana bread to give away (who doesn’t like banana bread?) and put in the freezer for a later treat. We will make 3-4 loaves.
