A couple months ago, we moved.
Of course, it really, really sucked – until it was over! Then we had this new, bigger place, with an actual room for an office and tons of storage. It took us 2 months to unpack all the boxes and make it home, but now we’re in the swing of things.
I’m afraid to admit this, but during the 3 months of packing, cleaning, moving, and unpacking, there was too much junk food eating. Totally and completely out of character for us, and it took it’s toll.
We’ve made a few resolutions. The most relevant one is to eat more veggies! I’m not what you call a veggie fan. I once exclaimed that I’d rather eat a shoe than a carrot, a statement that’s been dug up and mentioned to me repeatedly by my family. So more veggies? That’s a tall order.
But, there is a solution (and you’ll like this for your kids):
Cook them in your meals with a delicious sauce and meat. Easy peasy.
That’s why we’re big fans of stir fry. It effectively hides the veggies, because even I can stomach a carrot surrounded by rice and steak, doused in a deliciously healthy teriyaki stir fry sauce. Everyone wins!
One way to pull this off is to buy those frozen bags of stir fry veggies at the store. They’re precut, have a good ratio of everything, and taste pretty good (except for one mix we got that had teeny corn thingies. They were gross). If you’re trying to save your sanity? Totally acceptable.
For this meal, we did everything fresh. It adds a little extra to the meal, and we’re 100% sure of everything’s that going into it. We never quite know what’s put into packaged stuff (even things that aren’t on the label).
