Cameron and I have a lot in common – including our favorite food. We absolutely LOVE healthy spaghetti with meat sauce! When my mom makes my birthday meal she doesn’t even ask anymore because 99% of the time I say I want spaghetti.
Yes I’m nearing 30 (eek!) and my mom still cooks me a birthday dinner . . . don’t be jealous!
The best part about spaghetti is that it’s a really sneaky way to cram a bunch of vegetables into a meal and Cameron doesn’t complain! It also makes the best leftovers – in fact I think sometimes it’s even better the next day.
The trick to real foodifying meals is to learn how to make substitutions – this works fantastic for some meals, but for others, not so much. Spaghetti’s been one of our go-to meals because it’s almost already real food approved! You’ll see some of the changes in the recipe, but they’re minimal.
We attempted to make sourdough noodles but that was way too much work. Instead we settled for using Einkorn noodles. When we’re feeling REALLY ambitious about being healthy we even throw in a bit of grass fed liver in with the beef in about a 1:5 ratio. Course the last time I did that I burned the crap out of the liver and it tasted horrific! Cameron didn’t even want the leftovers and let me tell you that’s saying something about how nasty it was! Just don’t burn your liver and you can’t even tell it’s in there 🙂
