Poppy seed chicken is one of my favorite meals my mom makes.
As long as I can remember, I’ve always thought of my mom as a great cook.
She’s always been able to rifle through the pantry and spice rack and whip up something brand new that tasted great. Or, pull out a recipe from one of her dozen cook books and find a perfect meal that always hit the spot.
Not so much. Just ask about the spaghetti pate, the dozen eggs dumped on the stovetop, or his go-to “Mom’s gone” meal: tater tots and chicken or beans and weenies.
Unfortunately, I’m much more like my dad… thank goodness for Cameron’s love of cooking. My mom never expected to swap recipes with my husband. HA!
Okay, back to my mom.
Since she’s such a great cook, she’s been the inspiration behind probably half the recipes on this site. We take something that she likes to make, sub in a few more healthy ingredients, and voila! We’ve got ourselves a healthy meal that tastes just like something I grew up eating.
That’s a win because I can almost guarantee that even your kids or nitpicky spouse will gobble this up.
The only slightly tricky part here is the bread crumbs. For a few years, I would slice up some homemade bread, butter it, and broil until very crispy, and then blend in the Ninja.
Until Mom taught me a better way to do it.
When she gets to the end of her loaves, she just tosses the heel into a bread basket she keeps on top of the fridge. Then when she’s got a bit of a collection up there, she’ll toss the stale bread in the blender and run that puppy until only bread-crumb sized chunks are left.
In this recipe, we also make the cream of chicken soup from scratch. We want to avoid the processed version of Campbell’s soup with several questionable ingredients like:
CHICKEN STOCK, VEGETABLE OIL, MODIFIED FOOD STARCH, WHEAT FLOUR, CREAM (MILK), CONTAINS LESS THAN 2% OF: SALT, DEHYDRATED MECHANICALLY SEPARATED CHICKEN, SOY PROTEIN CONCENTRATE, MONOSODIUM GLUTAMATE, CHICKEN FAT, YEAST EXTRACT, FLAVORING, BETA CAROTENE FOR COLOR, CHICKEN FLAVOR, CELERY EXTRACT, BUTTER (CREAM, ANNATTO), ONION EXTRACT.
Sounds tasty right? Not really.
Then of course there’s only one secret left that you should know: make sure to prepare lots– this meal’s absolutely fantastic and has been a family favorite for years! It definitely makes terrific leftovers.
