One of the first treats I had at the in-laws was one I’d never even heard of before!
Seriously? They call something you eat… FOR DESSERT… dump cake?
If you’ve never had it, it’s pretty much a simplified version of cobbler that doesn’t require a dutch oven and a campfire. In other words, it’s less fun… but definitely easier. And, it’s almost as good –especially with a scoop of honey vanilla ice cream served with it!
Of course, there’s the bad news in that it’s pretty much just flour and sugar (and which delicious desserts aren’t?).
Regular dump cake is crazy easy. A box of cake mix, a can of cherry (or apple!) pie filling, and a bunch of butter on top!
Shouldn’t be too hard to real-foodicize, right?
And you’d be right. It WAS easy – especially if you only keep health ingredients in your pantry.
Do you need sugar? Use raw honey, sucanat, or organic cane sugar if needs be.
Calls for flour? Use the sprouted spelt instead.
And actually, we’ve been OBSESSED with using organic sprouted spelt flour lately. If you’ve seen our other dessert recipes, we use sprouted wheat flour a lot. But, it’s thicker and has a slightly weird nutty flavor, making it hard to cook with.
That’s not the case with sprouted spelt! It’s pretty much a 1:1 substitute in our desserts, without altering the flavor. Just this week, I’ve used it to thicken gravy and my sweet and sour sauce. Sure it’s a little pricier, but it’s worth it to me to avoid the nutrient atom bomb that is white flour.
One last cool thing about this recipe – I mentioned above that regular dump cake uses a box of cake mix. Well, all the dry ingredients in this recipe double as a cake mix! Make mason jars of this stuff and replace your Betty Crocker boxes. Try adding some cocoa, and you have a healthy sprouted flour chocolate cake recipe!
