Date cake… sounds gross, we know. It seems like the kind of thing you’d eat when you went to grandma’s house that no one really wanted to eat.
We’d never even considered cooking with dates before our real foodie days – but now we’ve learned it’s one of nature’s best sweeteners!
Except… it’s still gross to bite into chunks of date. It reminds me of the time we stayed on a family farm for a week, and Grandma made muffins almost daily with whatever she could find.
Lemons, cranberries, grapes, dates, rhubarb (seriously), and other things we’re not quite sure of. It was definitely an experience eating chunks of fruit in weird combinations.
But, there’s no such issues with this cake! The dates only provide a little sweetness, meaning less sugar (which is always good – even if it’s organic). And the secret to not biting into chunks of dates?
Soaking them in boiling water.
I love these tricks we learn from past generations! We got this cake recipe from my mom – and I’m not gonna lie, we were skeptical when she told us we were having date cake (sorry Mom). Then before we knew it, we’d nearly polished off a 9×13 with only 5 people!
Needless to say, we knew we needed a recipe like this (real foodified, of course), and it turns out it’s a pretty easy fix to make this a healthy version! Our brownies took a million trials to make them perfect.
We’re already imagining this recipe as the perfect make-and-take type cake to a picnic or get-together! It’s not as moist like a normal chocolate cake, and it stays together really well. In other words, scooping out a piece into a pair of grubby little hands at a park goes pretty well.
And our last bit of proof that this cake dominates:
Little Ryker man had his second birthday this past week, and he barely touched his chocolate cake. But when we make this stuff, he snarfs it! Definitely passes the kid test.
